Ultimate Chocolate Cheesecake
Cheesecake Batter
2 1/2 pounds of cream cheese
2 1/2 Cups of granulated white sugar
6 eggs
3/4 cups of Dark Cocoa
1/2 cup of heavy cream
1/4 cup amaretto
2 tablespoons of Flour
Crust
2 cups of crushed Graham Crackers
5 Tablespoons of melted butter
2 tablespoons sugar
Directions: take a 9 inch spring form pan line the bottom of the pan in parchment paper wrap spring form in aluminum foil to set the cheesecake into a water bath.
To make the crust: Take 2 cups of crushed graham crackers, 5 tablespoons of melted butter and 2 tables spoons of sugar.
Mix all of these ingredients together in small bowl pour into your prepared 9 inch spring form pan. take the back of large spoon to flatten mixture so it creates the crust.
For the batter: take 2.5 pounds of cream cheese at room temperature put into kitchen aid mixer with 2.5 cups of sugar add cocoa and flour then add cream and amaretto mix all together till smooth. Then add eggs one at a time not over beating them, just till they are mixed in completely.
Pour cheese cake batter into prepared 9 inch spring form pan set spring form into a larger pan and put 2 inches of water to create a water bath. bake for 1.5 hours at 300 degrees.
After cheese cake is baked remove foil and set entire pan into refrigerator and top with your favorite topping or serve with fresh raspberries or strawberries and garnish with fresh mint.
