PUMPKIN MUFFINS
3 Cups Flour
1 Tsp. Baking Soda
1/2 Tsp. Baking Powder
1/2 Tsp. Salt
1 Tsp. Cinnamon
1 Tsp. Nutmeg
1 Tsp. Cloves
3 Cups Sugar
1 Cup Vegetable Oil
3 Eggs
16 Oz. Pumpkin pie filling
Walnuts (optional)
Sift dry ingredients together into a big bowl. Set aside.
In another bowl, combine sugar, oil, eggs, and pumpkin filling between each ingredient. Add wet ingredients to dry and mix well.
Add walnuts if desired.
Spoon or scoop heaping scoops into greased muffin tin.
Bake at 350 in a pre-heated oven for 30 minutes
