How you clean and process your deer during the first couple of minutes after you shoot it can determine how safe it is to eat.


Some common tips include...washing the body cavity out with clean, cold water, spread the rib cage out to help cool it off, and make sure you use food quality plastic bags, rather than dark-colored garbage bags that may contain resins.


Jon Speidel of Gunderson's Meats in Mondovi says if you skin your deer yourselves there's more of a chance for dirt, leaves, and sticks to get on it during transplant than if they bring it in whole.


Gunderson's, in Mondovi will stay open this Saturday and Sunday from 2 till 7 pm to start taking in deer.
