TODAY INTERVIEW: Cooking up your Thanksgiving leftovers with Joe Luginbill

(WEAU) -- When it comes to Thanksgiving, we tend to overdo it. We make a little too much turkey, an overflow of stuffing and a never-ending supply of cranberry sauce.

Well instead of gawking at how much food you still have left, why not turn your leftovers into something new?

Local celebrity teen chef Joe Luginbill of Joe's Kitchen has some quick and easy ideas to turn those meals from yesterday's news to today's lunch and dinner.

Curry-Spiced Sweet Potatoes
1.Pour your mashed sweet potato left overs in a saucepan
2.On medium high heat, melt butter in pan and stir
3.Add onions to taste along with Cumin and Curry Spices (or your favorites)
4.Say goodbye to Sweet Potatoes, hello Sassy Potatoes!

Turkey Noodle Soup
1.Add 4 cups of water to pan over stove, add 1 cup chopped turkey
2.Once it has come to a boil, add onions, carrots, and ginger (fresh or ground)
3.Add your rice noodles at very end and give a few minutes to cool. If using other types of pasta you will need to have a bit more time to cook them. Rice Noodles don’t take long at all.

Apple Butter Turkey Sandwich

Onion and Apple Butter with Turkey – You wouldn’t think they taste good but they have a unique flavor you might just enjoy!

Toast Turkey Sandwich

Toasted Turkey Sandwich with sprouts, fresh cilantro, carrots (show string cut), mayonnaise, and leftover turkey

Turkey and Stuffing Casserole
1.Butter bottom and side of casserole dish and preheat oven to 350 degrees
2.Place turkey and stuffing on top of each other in pan (layers)
3.Spread a thin layer of cranberry sauce that you have leftover (or if you would like, use Silver Spring Foods Cranberry Horseradish with the perfect ZING!)
4.Cook @ 350 in oven for around 30 minutes
